Jackson Triggs Vidal Ice Wine

 Ice wine is a style of dessert wine that is produced from grapes that have been frozen while still on the vine.  The sugars do not freeze however the water does leaving only the most concentrated juices to be extracted from the grapes. All ice wine must also be harvested by hand.  Canada and Germany are the world’s largest producers of ice wines. Jackson Triggs is a combination of the founder’s last names Allan Jackson and Don Triggs who established the winery in 1993.  The vineyards are spread across the southern border of Canada from Okanagan to the Niagara Peninsula with Okanagan located in the west and the Niagara Peninsula to the east.  Vidal is a French hybrid white grape and is the only French hybrid allowed in Canadian wine production.   


The Jackson Triggs Vidal ice wine is a golden straw color.  On the nose are aromas of golden apple, honeysuckle, caramel, overripe peach, ripe nectarine, banana, papaya, mango, citrus, and apricot.  On the palate are hints of pear, roasted red apple, red grape, burnt caramel, ruby red grapefruit, and sweet tangerine.  This wine finishes rich with bright acidity.  

 

Food Pairings

 
In general, ice wines made from white or lighter style grape varietals pair best with:
·         Desserts made with fruits such as nectarines, mango, peaches, or apples
·         Desserts with ginger, vanilla, or nutmeg spices and flavors


This wine would not go well with:
·         Desserts based upon chocolate, coffee, or cocoa
·         Mild cheese such as Fontina, Port Salut, Brie, and Triple Cream
